In Nyons, the Vignolis cooperative unites the olive growers of the Drôme Provençale around a single variety, the Tanche, protected under AOP since 1994. Three conditions define the Nyons AOP: the Tanche olive, the terroir of the Baronnies Provençales, and a late harvest — and it is precisely these that give Nyons olive oil its distinctively ripe, fruity character.

The Nyons terroir stands apart thanks to its elevation (up to 1,640 ft / 500 m) and its continental exposure: the Tanche ripens more slowly and over a longer period here than varieties grown along the Mediterranean coast.

On the palate, Nyons AOP delivers a profile typical of late-harvest oils: sweetly fruity, low in heat, with aromas of ripe fruit and toasted nuts.
