That's the spirit of this place: a well-stocked counter, densely packed shelves, and the scent of cocoa and spices that hits you at the door.
The neighborhood around us has changed — the store has not. Rue Tiquetonne remains narrow, cobblestoned, and alive. You'll pass pastry chefs picking up their morning couverture, chefs from neighboring restaurants, bakers from rue Montorgueil, and home cooks who come up from the Étienne Marcel metro stop to find what no supermarket will ever carry.

Every G. Detou category is represented in the store. No elaborate staging — just floor-to-ceiling shelves stocked with everything you need to bake like a pro 🍫.
On the chocolate side, we carry the serious references: Valrhona (Guanaja, Caraïbe, Manjari), Barry, Weiss, Callebaut — in bars, pistoles, couverture, and cocoa powder. For pastry, you'll find praliné pastes, feuilletine, fondant, Louis François gelling preparations, and mycryo. On the spice side: Bourbon vanilla from Madagascar and Tahiti, dried fruits (almonds, hazelnuts, Iranian pistachios), candied fruits from Apt, and orange peels. Plus Fallot mustards from Beaune, syrups, yeasts, certified food colorings, and natural flavorings.
Our assortment is designed to serve two types of customers: the professional pastry chef looking for a kilo of Valrhona Caraïbe couverture at wholesale pricing, and the home baker making a Christmas log or birthday cake who wants the same product without having to order 5 kg. We sell the same references to both, at the same price.
The in-store experience
Our team knows the products. Our history and expertise
The store at 58 rue Tiquetonne opened in 1951, when Gérard Detou took over the grocery. At the time, the central Les Halles market was still in Beaubourg, right next door. G. Detou supplied mainly the neighborhood's food merchants and the restaurateurs of Les Halles.
In 1969, Les Halles relocated to Rungis. The professional clientele shifted, and the neighborhood transformed. G. Detou pivoted: the store opened its doors to the general public and expanded its offering for home pastry enthusiasts. The same products, the same wholesale prices — but accessible to everyone. This dual positioning — professionals and home cooks, with no difference in price or service — still defines the identity of the house today. Since 1951, we've stayed true to this address, this counter, this neighborhood.
