At G. Detou, there are plenty of great people running the shop, and we'd love to introduce them to you.
First, there's the owner...
First, there is the owner, who took over the shop in 2022 and would rather not be talked about too much. A welcoming man in his forties who fell into gastronomy by chance and stayed by choice. An entrepreneur who worked for a long time in the vanilla trade, with both growers and top chefs, and who now humbly acts as the guardian of this institution.
So he did some necessary renovation work, but it's not visible. He introduced a few new items while keeping the essentials. In short, he makes sure to preserve the spirit of the place. And don't be surprised if you see him in the aisles, answering customers' questions like any other salesperson; his open office is right behind the chocolate section.
But let's not dwell on him; he wouldn't like that. He would prefer us to talk about the rest of the team. Not "his" team, just the team. Because he is a part of it just as they are.
What he likes
Good organization and effective product presentation. There is a lot of choice, so he likes to make sure customers can find what they want without searching for long.

And especially the team!
There are seven employees who have been here for twelve years, two of whom are in the Lyon shop. They didn't graduate from top culinary schools, but they are dedicated to customers. They have a passion for sharing advice.
They are always ready to head to the warehouse to find a product for anyone who asks. Because their goal, one of the pillars of G. Detou since its creation, is to provide service. And they do it well.
The other six were recruited after 2022. Most of them have a pastry certification or at least significant knowledge in the field. Sometimes, it's true, they may be less specialized than certain customers, but they are passionate about what they sell and could talk about pastry for hours. Even if they don't actually do so.
What they like
The team spirit and great atmosphere they all create in their own way.

And finally, there is the team as a unit
Finally, there is the team as a unit. The "nearly fifteen" mentioned at the start, like football fans being the twelfth man. Here, the employees and the owner are interdependent. They stand in solidarity with each other, moving forward with the goal of offering customers exactly what they came for: service and quality at the best prices.
P.S.: Of course, there are the producers with whom G. Detou collaborates and the customers, loyal or new, who visit the shop. Nothing would be possible without them, but it would be too tedious to list them all individually.
