Detou catalog: pastry chefs from the region, bakers from the Presqu'île, chocolatiers from Croix-Rousse, and knowledgeable home cooks all come here for the same couverture chocolate the pros use — without the pro invoice. Classic layout: pastry and chocolate on one side, cooking and spices on the other, with dried fruits and candied fruits at the back.
Couverture chocolate — Valrhona, Barry Callebaut, Weiss, Cacao Barry, Michel Cluizel: pistoles, blocks, and discs in large formats. Guanaja, Jivara, Ivoire, Caraïbe, Manjari available in bulk bags of 250 g, 1 kg, or 3 kg.
Pastry & confectionery — Sicilian pistachio paste, hazelnut praliné paste (Louis François, Norohy), feuilletine, icing sugar with starch, blanched almond flour, Madagascar bourbon vanilla, gelatin, agar-agar, mycryo, food-grade colorants, natural flavorings.

Maison G. Detou was founded in Paris in 1951, at 58 rue Tiquetonne, steps from Les Halles. In 2009, it opened its second store in Lyon, at 12 rue du Plat on the Presqu'île — the neighborhood of Lyon's chocolatiers and celebrated left-bank dining rooms.
From day one, the store has served the dual clientele that defines the Maison's DNA: professionals who come for a 5 kg tub of praliné paste, and home cooks who leave with 200 grams of Iranian pistachios and three vanilla beans. Since Benoît Bourloton took over in 2024, the positioning remains unchanged: wholesale prices, a carefully curated selection, and straightforward advice at the counter.
