Why We Carry This at G. Detou

\n

The Vignolis cooperative, based in the Nyonsais region, brings together around a hundred Tanche olive growers in the Drôme Provençale, all operating under the AOP Nyons specifications. The AOP Nyons designation, recognized in 1994, guarantees the Tanche variety, the production area (the Baronnies Provençales), and the late-harvest method — olives are not picked before December 20.

The Drôme Provençale is a distinctive olive-growing region: more continental than the Côte d'Azur, later in the season than Spain, it produces a style of oil and olive with no real equivalent elsewhere in France.

Nyons olive oil is defined by its roundness: the late harvest, after December 20, gives the Tanche a riper, more mellow fruitiness than early-harvest oils.

\n

Vignolis was the natural choice for AOP Nyons: it is the historic cooperative of the area, bringing together the majority of Tanche growers. The one-liter bottle is the go-to format for a household that cooks regularly with Nyons olive oil. Best consumed within two to three months of opening to preserve the aromas.

How to Use It

For an active family, this oil works beautifully every day — as a finishing drizzle over salads, steamed vegetables, or cold fish marinades.

\n

For seasonal cooking, Nyons olive oil pairs particularly well with spring vegetables (asparagus, young zucchini) and summer fish (sardines, red mullet).

\n

For homemade pizza dough, brush it over the crust straight from the oven — the Nyons oil gives a gentle, mellow finish quite different from a classic Italian pizza.

For fried or scrambled eggs, a light drizzle on the plate works wonderfully: the oil's softness pairs naturally with the richness of the egg.

Nyons olive oil does not hold up well to high-heat cooking: its smoke point is around 190 °C, and its delicate aromas fade above 130 °C. Use it as a finishing oil, raw, or for gentle cooking — for frying or high-temperature applications, opt for a standard, less expensive olive oil or a neutral oil such as high-oleic sunflower. This is a product that deserves respect in the kitchen, measured by the spoonful rather than poured carelessly.

A few wine pairing ideas: a white Lirac or a Picpoul de Pinet with summer dishes featuring Nyons oil (tomato-mozzarella, grilled sardines, baked fish); a light red Côtes du Rhône Villages with grilled white meats finished with a drizzle of oil.

A bit of history: Tanche olive cultivation in Nyons dates back at least to the Middle Ages, but it was the catastrophic frost of 1956 that shaped the modern industry — devastating the olive groves, it forced growers to band together in cooperatives to rebuild and invest collectively. The Vignolis cooperative was born out of this local agricultural reconstruction movement.

For best results, store in a closed cupboard at a stable temperature (below 20 °C) with the cap tightly sealed. Extra virgin olive oil requires careful storage: away from light (UV), heat (above 25 °C), and oxygen (keep the cap tightly closed).
