\nVignolis is the cooperative of the Nyonsais region (Drôme), specializing in the processing of Tanche olives under the Nyons AOP designation. The Nyons AOP specifications require the Tanche variety, a harvest no earlier than December 20, and a strictly defined geographic area limited to the Baronnies provençales.
\nThe Drôme provençale is a distinctive olive-growing region: more continental than the Côte d'Azur, with a later harvest season than Spain, it produces a style of oil and olive that has no equivalent elsewhere in France.
\nAs it reaches full ripeness, the Tanche olive develops a sweet, fruity flesh quite unlike classic Mediterranean varieties. It is precisely this characteristic that justifies the stringent requirements of the Nyons AOP specifications.
