Vignolis operates as a cooperative: Tanche olive growers from the Baronnies provençales bring their harvest for collective processing under the AOP Nyons designation. Recognized in 1994, AOP Nyons guarantees the Tanche variety, the production zone (Baronnies provençales), and the late-harvest method — picking begins no earlier than December 20.

The Nyons terroir is defined by its altitude (up to 500 m) and its continental exposure: the Tanche ripens more slowly and over a longer period here than Mediterranean coastal varieties.

Grown exclusively in the Baronnies provençales, the Tanche is a dual-purpose olive variety — pressed for oil or cured for eating. Its characteristic wrinkled skin results from the olive naturally dehydrating on the tree as the season draws to a close.
