In Nyons, the Vignolis cooperative brings together olive growers from the Drôme Provençale around a single variety — the Tanche — under AOP designation since 1994. The Nyons AOP label is one of the oldest in French olive growing: recognized in 1994, it guarantees terroir (Drôme), variety (Tanche), and harvest schedule (after December 20th).

The climate of southern Drôme combines hot summers and cool nights at elevation — it is precisely this contrast that develops the Tanche's complex aromas.
