Description
Ravifruit's Mojito purée puts the lime and mint of the Cuban cocktail into a 1 kg carton. It is a sweetened, pasteurised fruit purée: lime juice (28.7% according to the label), crushed mint and natural mint flavouring, with no colouring or preservatives. It keeps at room temperature, between 5 and 25 °C, so it takes no room in the freezer. Ravifruit, founded in 1981 according to the carton, makes its purées in Anneyron, in the Drôme; the brand belongs to the Italian Irca group.
In pastry, work it like any fruit purée: pâtes de fruits, set inserts, a sharp ganache, sorbet or granita. It also flavours a panna cotta, a cheesecake or a mirror glaze, with the coolness of mint on the finish. Behind the bar, it saves squeezing limes and muddling leaves: topped up with sparkling water and poured over crushed ice, it makes an alcohol-free mojito, or the classic version with a dash of white rum.
Unopened, keep the carton in a cool, dry place. Once opened, refrigerate it and use within 7 days; a box on the back lets you write down the opening date. The pack is marked for professional use. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
