This forest honey is harvested in early July in the Nivernais forest, in the heart of the Morvan mountains. Originating from a rich and diverse forest environment, it reflects the floral complexity of the undergrowth. Generally brown in color, it develops flavors reminiscent of dried leaves and forest humus, sometimes with a refreshing, menthol note characteristic of the presence of linden trees. Its crystallization may be coarse, but this does not affect its quality or its excellent shelf life.
