Description
Patak's Hot Mango Pickle is a very hot mango pickle: pieces of mango, 57% of the jar, kept in rapeseed oil. Ground spices account for 7%, with crushed mustard and fenugreek seeds. Mango chutney is sweet; this pickle is salty, sour and hot, and you use far less of it. Patak's, established in 1958 according to the jar, has it made in Poland by AB Foods Polska and sells it in a 283 g glass jar.
At an Indian meal, the pickle sits on the edge of the plate and you take a little with each mouthful of basmati rice, dhal or mild curry. A dab is enough: the salt and chilli are concentrated. Finely chopped, a few pieces liven up a yoghurt sauce for skewers, a fried rice or a chickpea salad. A small spoonful also works in a melted cheese sandwich.
The jar contains oil and the label asks you to stir well before use. Keep it in a cool, dry place, then use it within 6 months of opening and before the date on the lid. The recipe contains mustard and is suitable for vegetarians.
