Description
Babbo's Sugo pronto Arrabbiata is an organic cooked tomato sauce, spiked with chilli and dotted with olives. Tomato juice and pulp make up 87.5% of the recipe, with 5% olives, basil, garlic and the chilli. According to the jar, the tomatoes ripen in Tuscany; the sauce is certified organic, from Italian agriculture, and Babbo Foods, based in Capalbio, sells it in a 340 g glass jar.
In Italian, arrabbiata means "angry", because of the chilli. Here the heat is clear but the tomato stays in front. Babbo suggests warming it gently, with a drizzle of extra virgin olive oil and a soffritto if you want to build it up, then stirring in the pasta: penne, the usual shape for arrabbiata, or gnocchi. It also works for poaching eggs straight in the sauce, or for simmering meatballs or chickpeas. A little grated pecorino at the table softens the heat.
Keep the jar in a cool, dry place; the glass and the metal lid can both be recycled. The recipe contains celery.
