Description
Babbo's Sugo pronto Melanzane is an organic tomato sauce with aubergines, melanzane in Italian. Tomato juice and pulp make up 81% of the recipe, aubergines 10% and onion 5%. According to the jar, the tomatoes ripen in Tuscany; the sauce is certified organic, from Italian agriculture, and Babbo Foods, based in Capalbio, sells it in a 340 g glass jar.
The aubergine melts as it cooks and makes a denser sauce than a plain tomato coulis. Use it for pasta alla Norma, the Sicilian aubergine dish: warm the sauce, stir in rigatoni or spaghetti, then grate ricotta salata over the top. It also fills vegetable lasagne, a courgette gratin or a bruschetta of toasted bread rubbed with garlic. Babbo suggests heating it slowly, with a drizzle of extra virgin olive oil and a soffritto if you want to build it up.
Keep the jar in a cool, dry place; the glass and the metal lid can both be recycled. The recipe contains celery.
