Description
These pitted dark sweet cherries in syrup come from Conserves Guintrand, a family firm based in Carpentras, in the Vaucluse, since 1898, now run by the fourth generation. They are sold under the P. Guintrand brand. The fruit is dark cherries grown in France; the logo on the can refers to fruit from Provence and the Rhône valley. The syrup is water and sugar, with anthocyanins to keep the dark colour and a little citric acid.
The fruit is already pitted, which saves time on a clafoutis, a Black Forest cake, an almond tart or a cheesecake. Once drained, each cherry keeps its shape in the oven. Keep the syrup: reduced in a pan with a dash of kirsch, it coats a panna cotta or vanilla ice cream. They also go with roast duck or duck breast, in a sauce. The can weighs 850 g, with 440 g of drained fruit, enough to fill a large tin. The maker warns that, despite their care, a stone may still be present: stay careful, especially with children.
Once opened, move the cherries to a closed container in the fridge and eat them within 3 days. You will also find the can on the shelves of our shop, 58 rue Tiquetonne, Paris.
