Poivrons à l'huile d'olive et à l'ail YR 314 ml

This jar comes from Conserves Guintrand, founded in 1898 in Carpentras, which sells its jarred range under the Y. Reynier brand. The peppers, from Spain according to the label, are prepared fresh: washed, deseeded and cut into strips about 12 mm wide, according to the producer's technical sheet. Finely chopped garlic, salt and a little citric acid are added, then the peppers are covered with olive oil before pasteurisation. Peppers make up 80% of the jar, olive oil 16% and garlic 2%.

When you open it, the strips are bright red, tender and supple, in a golden oil. The producer describes a clear pepper flavour with the garlic kept in the background. It is a ready-to-serve antipasto, with no roasting or peeling. Drain them over a pizza or focaccia, into a chickpea salad, a hot or cold sandwich, or onto toast with a little fresh goat's cheese for an aperitif. They also go with grilled meat, an omelette or pasta. The garlicky oil left in the jar is good for a vinaigrette or for frying vegetables.
