Description
The sprat (Sprattus sprattus) is a small silver fish of the herring family, like the sardine. The ones in this Kaviari tin are trawl-caught in the Baltic Sea (FAO zone 27), smoked the traditional way and hand-packed in rapeseed oil, as the "hand-packed" logo on the label shows. Fish makes up 70% of the recipe. The round tin holds 120 g, of which 84 g is drained fish. Smaller than a sardine, sprats are eaten whole, bones and all, and the smoking gives them a stronger taste than a sardine in oil.
Serve them with drinks on toasted rye bread, with a lemony cream and a few rocket leaves, as Kaviari suggests. Mashed with a fork into fresh cheese and chives, they make a quick rillettes. They also go into a quiche, onto a pizza or into a warm potato salad with red onion. Drain them just before serving; the oil can go into a dressing.
Store the tin at room temperature, between 0 and 25 °C, away from light and moisture. Once opened, keep it cool and eat promptly. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
