Description
These Aleppo pepper flakes are packed by G. Detou, a pastry and cooking supplier since 1951 according to the label, in a resealable 100 g pouch. They come from Turkey, as the label states, and are made of more than 87% Capsicum annuum chilli, with a little salt and vegetable oil. These give the flakes their soft, slightly oily feel. The name comes from the Syrian city of Aleppo.
A pinch finishes a fried egg, a plate of hummus or labneh, or a tray of vegetables straight from the oven. Warmed for a few seconds in melted butter, they turn the butter red; spoon it over poached eggs on garlic yoghurt, Turkish style. They also lift a lamb marinade, a pizza or a salad of tomatoes and red onions.
The flakes are already salted: taste before you salt the dish. Close the pouch well after each use so they do not dry out.
