Sauce soja fumée (sans gluten) 100 ml
A smoked tamari from the Igeta brewery in Izumo, Japan: a soy sauce made from soybeans, salt and water, with no wheat and no added MSG. Its smoky taste lifts grilled meat, a soft-boiled egg, tofu or a dressing. A few drops are enough.

Description
This smoked tamari comes from the Igeta soy sauce brewery in Izumo, in Shimane Prefecture, Japan. It is imported into France by Umami, in Fontenay-sous-Bois. Tamari is soy sauce brewed without wheat: the ingredient list is three words long, soybeans, salt and water. That is why it is the one to pick when you want a gluten-free soy sauce, as the front label states, along with no added MSG. This one is smoked, hence its Japanese name, which means to smoke. It comes in a small 100 ml bottle.
Tamari is thicker and rounder than a light soy sauce, and the smoking adds a wood-fire note. Use it drop by drop: on grilled beef or duck breast, a soft-boiled egg, pan-fried tofu, sautéed mushrooms or avocado. It gives a barbecue taste to a marinade without a grill, and flavours mayonnaise, a dressing or a butter for roast vegetables. With 15.2 g of salt per 100 g, there is no need to add more salt to the dish.
Unopened, keep the bottle at room temperature, away from sunlight. Once opened, refrigerate it and use within 3 months. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
