Description
Les Bons Sablés Noisette come from Maison Toussaint, a biscuit maker based in Arcelot, near Dijon, since 1996. The box reads "Fabrication artisanale, Bourgogne, France". These are small, thick, round shortbread biscuits, stacked in a 130 g box with a window that shows the golden dough. Brown sugar (vergeoise) gives them a caramel note and a darker colour than a shortbread made with white sugar. The dough is made with butter, with no preservatives or colourings according to the box, and the company states on its online shop that its hazelnuts come from the Périgord.
Serve them with coffee or tea, or next to a custard, vanilla ice cream or a poached pear, where their crumbly texture adds the crunch the plate is missing. Crushed, they make the base of a verrine or a quick crumble over roasted apples. For a cheesecake base, blitz them with a little melted butter, press the mix into the ring and chill it.
Keep the box in a dry place and close it well after each opening so the biscuits stay crisp. You will also find them on the shelves of our shop, 58 rue Tiquetonne, Paris.
