Description
Les Arcelottes are fine gingerbread meringues made by hand by Maison Toussaint, a house set up in 1996 in Arcelot, a village in the Côte-d'Or near Dijon that gave them their name. The house is known for its pain d'épices, the Burgundy honey gingerbread, and here it folds 9% of it into a meringue of egg whites and sugar. Each piece is a small oval, ridged stick, cream in colour and flecked with brown where the gingerbread shows through.
The texture is that of a dry meringue: it cracks under the teeth, then melts almost at once, leaving a taste of honey and mild spice. The box states they are made without colouring. The house suggests eating them as they are, dipping them in coffee, or serving them with ice cream or a vanilla custard. You can also crumble them over a crème brûlée, fromage blanc or a pear compote, or set them around a bowl of fruit just before serving so they stay crisp.
Keep the 95 g box in a dry place at room temperature: moisture softens meringue, so close it well once opened. You will also find them on the shelves of our shop, 58 rue Tiquetonne, Paris.
