Description
Fab'Pat Liquorice is a flavouring paste from La Fabrique, the pastry brand of the Nactarome group, which since 2025 has brought together Sevarome's know-how and Trablit coffee extracts. The label calls it a "liquorice natural compound coloured": a liquorice-flavoured compound built on invert sugar and dextrose, coloured with caramel. It is made in France, in Lieusaint, and sold in a 1 kg tub with a screw lid.
A compound flavours and colours in a single step, where a liquid flavouring adds taste without tint. Stir it cold into a pastry cream, a custard, a whipped ganache or an ice cream base and you get an even brown shade with no extra colouring. It suits a liquorice and blackcurrant entremets, a macaron, a panna cotta or a whipped cream piped over a red fruit tart. As a paste, it blends more easily into a fatty mass or a warm cream than on the surface of a cold mix.
The maker states on the tub that use is restricted and must follow current regulations: dose in small amounts and taste before adding more. Keep the tub away from humidity and heat, with the lid tightly closed. You will also find it in our shop, 58 rue Tiquetonne, Paris.
