Acacia Honey from the Beekeeping School 1kg

This acacia honey comes from Le Rucher de l'École, a bee farm set up in a former village school in Saint-Léger-de-Fougeret, in the Nièvre, inside the Morvan regional nature park. Virginie and William Gay have kept bees there for two generations. The honey comes from the flowers of the black locust tree (Robinia pseudoacacia), harvested in May and June right by the farm.

The producer describes it as a clear honey, pale yellow to blond, very mild, with a beeswax note that can be more or less marked. The jury of the 2024 Concours général agricole in Paris noted a woody, floral nose with a fresh touch. What sets it apart is its texture: it stays runny for a long time, and when it does crystallise, the grain stays fine. That makes it easy to use in the kitchen. It dissolves readily in a hot or cold drink, measures out by the spoon in a vinaigrette, and sweetens fromage blanc or a fruit salad without masking the fruit. In baking, add it to a madeleine batter, a gingerbread or a nougat.
