A wildflower honey from the Morvan hills, made by Virginie and William Gay, beekeepers in Saint-Léger-de-Fougeret. Unpasteurised, it is amber in colour with a gentle, slightly woody taste. Spread it on toast, stir it into yoghurt or bake it into gingerbread.

Description
This Morvan hills honey comes from Le Rucher de l'École, the farm run by Virginie and William Gay in Saint-Léger-de-Fougeret, in the Nièvre. The label describes them as bee shepherds for two generations and carries the words Miel de France (honey from France). Their hives forage on the wild flowers of the Morvan Regional Natural Park: wild cherry, holly, raspberry, thistle, bramble and heather, according to the beekeepers, with a harvest at the end of July. The honey is spun out by centrifuge at hive temperature, around 34 °C, and it is not pasteurised.
It is amber in colour, with quiet aromas and a woody edge that sets it apart from a more neutral acacia honey. Spread it on buttered country bread, stir it into yoghurt or fromage blanc, or use it to sweeten tea without covering the taste. In the kitchen, a spoonful glazes a duck breast or roasted carrots, or rounds off a mustard vinaigrette. In baking, it suits a pain d'épices or honey madeleines.
This honey crystallises naturally within a few months, a sign that it has not been heated. To make it runny again, stand the jar in a warm water bath for a few minutes. Keep the 1 kg jar at room temperature, tightly closed. You will also find it in our shop, 58 rue Tiquetonne, Paris.
