A linseed oil cold-pressed on the farm by Philippe and Lydie Fraysse, in the Tarn, from the seeds they grow. Golden with a green, vegetal taste, it is meant for dressings and cold dishes, never for cooking.

Description
This linseed oil comes from Maison Fraysse, a family farm in Villeneuve-sur-Vère, between Albi and Cordes-sur-Ciel, in the Tarn. Philippe, Lydie and Adrien Fraysse grow flax, rapeseed and sunflower there, then press their own seeds. The oil comes from a first cold mechanical pressing, with no solvent and no refining: it is a virgin oil, golden in colour, with a delicate, vegetal taste.
What sets it apart from the farm's rapeseed or sunflower oils is how fragile it is: it does not stand heat, and the label says not to use it for frying. Keep it for cold dishes. Add a spoonful to a dressing with cider vinegar and mustard, over warm lentils, a potato salad or beetroot. Pour a drizzle over a soup just before serving, over steamed vegetables or into fromage blanc with herbs.
Before opening, keep the tin away from heat. Once opened, store it in the fridge and use it within three months. The opaque metal tin protects it from light. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
