Description
Patak's Extra Hot Curry Paste is a cooking base: a blend of ground spices, which make up 22% of the jar, bound with rapeseed oil and sharpened with tamarind. Coriander, paprika, cumin and turmeric open the spice list, and the chilli sets the tone. The label gives it four chillies and the words "extra hot"; in the Patak's range, the Madras paste sits just below it. The 283 g glass jar is made in Poland by AB Foods Polska.
This paste is not eaten as it is: the label states that it must be heated before eating. The method on the jar is simple. Fry the paste for 3 minutes, add your chosen ingredients, then simmer until everything is well cooked. It suits a pork vindaloo, a lamb or beef curry, or a chickpea and spinach curry. To tame the heat, stir in a little coconut milk or yoghurt at the end of cooking, or serve the dish with plain rice.
Keep the jar in a cool, dry place. Once opened, use it within 6 months and before the date on the lid. The recipe contains mustard and is suitable for vegetarians.
