Moutarde de meaux royale au cognac 100g
A wholegrain mustard from Pommery, flavoured with 6% cognac. The seeds are left whole: the texture is grainy, the heat is there without burning, and the cognac leaves a warm note at the finish. Serve it with a rib of beef or whisk it into a cream sauce.

Description
Pommery Moutarde Royale with Cognac is a wholegrain mustard flavoured with 6% cognac. It is made in France by Les Assaisonnements Briards, in Nanteuil-lès-Meaux, the house that also makes Pommery's Moutarde de Meaux. The seeds are left whole and the texture is grainy. The cognac does not cover the heat of the mustard: it leaves a warm note at the finish.
As on the maker's website, it comes in a 100 g stoneware jar closed with a stopper. Serve it as it is with a rib of beef, a cold roast or a ham on the bone. In the kitchen, a spoonful whisked into a cream sauce goes with a pork tenderloin or a chicken supreme. Add it off the heat or at the very end of cooking, as long boiling takes away its heat. It also lifts a dressing for a warm lentil or potato salad.
Once opened, keep the jar in the fridge, as the label says. The maker describes the recipe as sulphite-free. Mustard remains an allergen, flagged on the label.
