Description
Moutarde de Meaux Pommery is an old-style wholegrain mustard made by Les Assaisonnements Briards in Nanteuil-lès-Meaux, east of Paris. The jar tells its story: the recipe, linked to the chapter of Meaux cathedral, is said to have been handed to J.-R. Pommery in 1760, and the brand dates its place at the royal table back to 1632. The family still makes it, passed from father to son. You know it by its stoneware jar, stoppered with cork and sealed with red wax, a 500 g size that keeps well on a kitchen shelf.
On the plate, the whole seeds stay firm and pop between the teeth. The taste is mild, with little heat, carried by the vinegar. In 2019 it was named best wholegrain mustard at the National Mustard Museum competition. It goes with a jambon persillé, cold roast pork, a roast chicken or a croque-monsieur. In a sauce, a spoonful stirred into cream lifts rabbit or kidneys; in a vinaigrette, it gives body to a warm potato salad.
