Description
This food colouring powder is sold by Cerf Dellier under its Patisdécor brand, reference P1100. It is water-soluble: it dissolves in water and in any preparation that contains water, unlike fat-soluble colourings meant for chocolate and cocoa butter. The pigment is tartrazine (E102), on a dextrose carrier. Dry, the powder looks bright orange; it turns lemon yellow in contact with liquid, so there is no need to worry when you open the jar.
In a liquid preparation such as egg white, syrup or cream, add it as it is, on the tip of a knife. In a firmer paste, marzipan or sugar paste, dissolve it first in a few drops of water to avoid specks of colour. Diluted in boiled water or food-grade alcohol, it also works in an airbrush or with a brush to paint a decoration. The label sets the maximum doses: 0.44 g/kg in confectionery, 0.30 g/kg in fine bakery wares, 0.21 g/kg in ice creams and desserts. For a batch of lemon macarons, these amounts are more than enough.
Keep the jar tightly closed, away from heat and humidity. The label notes that tartrazine may have an adverse effect on activity and attention in children. Also on the shelves of our shop, 58 rue Tiquetonne, Paris.
