CARAMEL BROWN WATER-SOLUBLE POWDER HAIR DYE 8 G

This Patisdécor powder food colouring, a brand sold by Cerf Dellier, gives sweet preparations a caramel brown shade. It is water-soluble: it dissolves in water and in anything that contains it, such as creams, syrups, icings or egg whites. The brown comes from a blend of three synthetic colourings, yellow, red and black, on a dextrose base. The manufacturer states that it tastes neutral and contains no titanium dioxide (E171).

In a liquid preparation, add it as it is. In a firmer paste, such as marzipan, ganache or macaron batter, dissolve it first in a drop of water so it does not leave specks of colour. Diluted in boiled water or food-grade alcohol, it also works in an airbrush on a yule log or an iced dessert. The powder is very concentrated: the label sets maximum doses of 0.41 g per kilo in confectionery, 0.27 g in fine bakery wares and 0.20 g in ices and desserts. So add the colour on the tip of a knife and check the shade each time.

The label points out that tartrazine (E102) and allura red AC (E129) may have an adverse effect on activity and attention in children, and that the powder must not be eaten as it is.
