PISTACHIO GREEN WATER-SOLUBLE POWDER DYE 8 G

This 8 g jar holds a powdered food colouring from the Patisdécor brand, distributed by Cerf Dellier, a supplier of pastry equipment and ingredients. It combines two colourings, tartrazine (E102, yellow) and patent blue V (E131), on a dextrose base, with no titanium dioxide. Do not judge it by the colour in the jar: the dry powder is orange, and the pistachio green only appears once it meets water.

Because it is water-soluble, it dissolves in water-based mixtures. In a liquid, a syrup or egg whites, add it as it is. In a firmer paste, marzipan or buttercream, dissolve it first in a little boiled water or food-grade alcohol. Diluted the same way, it goes through an airbrush or can be brushed on like paint. It is the right format for pistachio macaron shells, meringues and royal icing. The label sets maximum doses per kilo of mixture: 0.37 g for confectionery, 0.24 g for fine bakery, 0.18 g for ice creams and desserts. Do not eat it on its own.

Keep the glass jar closed, away from heat and moisture. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
