WATER-SOLUBLE POWDER DYE VIOLET 8 G

This water-soluble purple food colouring powder is part of the Patisdécor range, distributed by Cerf Dellier in Hénin-Beaumont. The glass jar holds 8 g of powder. The purple shade comes from a blend of blue and red colourings on a dextrose base.

Because it dissolves in water, it colours a mixture throughout: macaron shells, meringues, cake batters, creams, icings and pastillage. It holds its colour in the oven, which makes it a common pick for purple macarons flavoured with violet or blackcurrant. In a liquid preparation, such as a meringue being whipped, a syrup or a custard, add it as it is. In a firmer paste, marzipan or sugar paste, dissolve it first in a few drops of water to avoid specks of colour. For airbrushing, the label advises diluting it in boiled water or food-grade alcohol.

The powder is highly concentrated. The label sets a maximum dose of 0.14 g per kilo for confectionery, fine bakery wares, ice creams and desserts, so work on the tip of a knife, adding a little at a time until you reach the shade you want.
