NATURAL WATER-SOLUBLE POWDER COLORANT LEMON YELLOW 8 G

This powdered food colouring from Patisdécor, a brand distributed by Cerf Dellier in Hénin-Beaumont, gives a clear yellow. The colour comes from safflower extract, a plant related to the thistle, and the powder is carried on maltodextrin. The supplier lists it in its range of natural origin, next to the brand's synthetic yellows. It is water-soluble: it mixes into preparations that contain water, and not into pure fats such as chocolate. It comes in an 8 g glass jar.

Use it to colour macaron shells, meringues, creams, pastillage and cake batters all the way through. In a liquid mixture, add it as it is. In a firmer paste, such as marzipan or sugar paste, dissolve it first in a little water. It also works in an airbrush, dissolved in boiled water or food-grade alcohol. The jar gives a dose of 4 to 5 g per kilo of preparation: a plant-based colouring needs more powder than a synthetic one for the same depth of colour.
