Description
This Patisdécor powder food colouring, a brand sold by Cerf Dellier, belongs to the range of natural origin. Its orange shade comes from two colourings: carminic acid (E120), the red obtained from cochineal, and beta-carotene (E160a), produced by a fungus, Blakeslea trispora. They are carried on a base of sugar and maltodextrin with gum arabic. The powder is water-soluble: it dissolves in water and in anything that contains it.
In a liquid preparation, such as custard, syrup or whisked egg whites, add it as it is. In a firmer paste, dissolve it first in a little water. The manufacturer recommends it for meringues and macarons, creams, pastillage and oven-baked cake batters. The label gives an indicative dose of 4 to 5 g per kilo of preparation, so an 8 g jar colours 1.6 to 2 kg of preparation.
As carmine comes from an insect, this colouring is not suitable for vegan baking. The powder must not be eaten as it is. Keep the glass jar away from heat, light and moisture. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
