Description
This powder food colouring from the Patisdécor brand, distributed by Cerf Dellier in Hénin-Beaumont, gives a carmine red shade to sweet preparations. The colour comes from carminic acid (E120), the pigment in carmine, which is taken from an insect, the cochineal; it is carried on maltodextrin. It is the natural version in the range, for anyone who prefers to avoid synthetic colourings, but it is not suitable for a vegan recipe. The powder is water soluble: it dissolves in water, so it suits creams, syrups, icings and mixtures whipped with egg whites.
In a liquid preparation, add it as it is. For a firmer paste, such as marzipan or sugar paste, dilute it first in a little water, then work it in. Diluted in boiled water or food-grade alcohol, it can also go through an airbrush. Patisdécor recommends it for creams, pastillage and baked pastries such as meringues, macarons and cake batters. The label sets a maximum dose of 0.40 g per kilo of preparation: add the powder a pinch at a time and mix before adding more.
Keep the 8 g glass jar away from heat, light and humidity, with the lid tightly closed. Do not eat the powder on its own.
