Aubergines frites à la tomate YR 580 ml

These fried aubergines in tomato sauce carry the Y. Reynier brand and are made in Carpentras by Conserves Guintrand, a house founded in 1898 according to the jar. The cannery describes the dish as a Mediterranean classic made with aubergines and tomatoes from the south of France: the aubergines are trimmed, washed, cut into large pieces and fried, then folded into a tomato sauce cooked with olive oil and browned onion, lifted with garlic and fresh parsley. The jar mentions fresh tomatoes from Provence.

Aubergines make up more than half of the jar. You can see beige to dark brown pieces in a bright red sauce, flecked with parsley. In summer, serve them cold next to lamb chops or skewers off the barbecue. The rest of the year, warm them in the oven or the microwave and make them a main dish with rice, couscous or pasta. They also go on a slice of toasted country bread with burrata or a fresh goat's cheese, and alongside a roasted white fish.

The 580 ml jar holds 510 g net, two to three servings as a side. Keep it closed until the date shown on the lid. Once opened, keep it in the fridge and finish it within 3 days. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
