Description
This jar of Mont Ventoux einkorn with pistou carries the Y. Reynier label of Conserves Guintrand in Carpentras, in the Vaucluse. The firm was founded in 1898 in Caromb and moved to Carpentras in 1910; Yves Reynier, Pierre Guintrand's son-in-law, took it over in 1961. The grain comes from the slopes of Mont Ventoux: it is washed, soaked and cooked in water before being seasoned. The glass jar holds 240 g net (314 ml).
Einkorn, known in Provence as petit épeautre, is the oldest grain grown in the region. It keeps a firm bite and a nutty taste, lifted here by pistou: olive oil, basil and garlic, with a squeeze of lemon. This is a ready-to-serve dish, not a sauce. Cold, it makes a salad with tomatoes, feta or grilled vegetables. Warmed for a few minutes in a pan, it goes with white fish, a lamb chop or roast chicken. It also adds body to a soupe au pistou, or fills stuffed tomatoes.
Unopened, keep the jar in the cupboard until the date on the lid. Once opened, keep it chilled and finish it within three days. The product was selected for the Grande Exposition du Fabriqué en France at the Élysée Palace. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
