Description
This jar comes from the Guintrand cannery in Carpentras, a business founded in 1898 at the foot of Mont Ventoux and sold under the Y. Reynier brand. It holds petit épeautre from Mont Ventoux, which is einkorn (Triticum monococcum) according to the maker's technical sheet, making up 40% of the recipe. The grains are washed, boiled in water, then coated in a tomato sauce with olive oil, onion, garlic and a dash of lemon juice. They stay whole and tender, some split open by the cooking, in an orange-red sauce.
The dish is ready to serve. In summer, eat it cold like a Provençal tabbouleh, with a few basil leaves and a drizzle of olive oil. In winter, warm it gently in a pan and serve it next to roast lamb, a pork chop, a grilled sausage or a sea bream fillet. It also makes a filling for stuffed tomatoes or courgettes, and you can scatter it with parmesan and slide it under the grill for a few minutes.
The 314 ml glass jar holds 240 g net. Unopened, it keeps at room temperature until the date on the lid; once opened, keep it in the fridge and eat it within three days. You will also find it in our shop, 58 rue Tiquetonne, Paris.
