Description
These Williams pears in wine carry the Y. Reynier brand and are prepared in Carpentras by Conserves Guintrand, using fruit from Provence, the Alps and the Rhône valley. The 850 ml jar holds four or five of them, peeled, whole and kept with their stalks, for 340 g of drained fruit. They cook in a syrup of AOC Ventoux red wine, sugar and cinnamon, which colours them burgundy right to the core.
It is the classic winter dessert, ready to serve: a Williams pear poached in wine, with no peeling or cooking. The maker suggests serving them with their syrup in a small bowl, so you keep all the scent of the spiced wine. Add a scoop of vanilla ice cream, a crème anglaise or a sabayon. Reduced in a pan, the syrup turns into a glossy topping for fromage blanc or a panna cotta. Sliced into a fan, the pears top an almond cream tart, and they go well with a blue cheese or Roquefort on a cheese board.
