Description
These whole pears in caramel carry the Y. Reynier brand and come from the Guintrand cannery in Carpentras, in the Vaucluse, a family business founded in 1898. The jar states fruit from Provence, the Alps and the Rhône valley. According to the maker's technical sheet, the pears are peeled, keep their stalk and are cored from the inside, then packed four or five to a jar in a caramel syrup with a hint of vanilla seeds. The jar weighs 850 g, of which 340 g is drained fruit.
The Williams pear keeps its melting flesh and clean scent here, rounded by the caramel without being hidden. The label suggests serving the fruit with its syrup in a small bowl. You can also stand them upright on the plate, glazed with reduced syrup, with a scoop of vanilla ice cream, a crème anglaise or a few toasted flaked almonds, for a simple take on poire Belle-Hélène. Cut into quarters, they top a thin puff pastry tart, a clafoutis or a charlotte. The leftover syrup, reduced in a pan, makes a topping for rice pudding or fromage blanc.
