Poires Williams entières à la vanille YR 850 ml

This 850 ml glass jar holds four or five whole Williams pears, peeled, cored and left with their stalks. They come from Provence, the Alps and the Rhône valley, and are jarred in Carpentras by Conserves Guintrand under the Y. Reynier brand. The syrup is flavoured with natural vanilla, and the black seeds are easy to see at the bottom of the jar. The maker places production between mid-September and the end of October, at harvest time. Total net weight: 850 g, of which 340 g is drained fruit.

The flesh is tender and golden, and the Williams pear keeps its clear flavour under the vanilla. The label suggests serving the fruit with its syrup in a small bowl. For a poire Belle-Hélène, drain the pears, coat them with hot chocolate sauce and add a scoop of vanilla ice cream. They go whole into a Bourdaloue tart or can be fanned out over almond cream. Reduced in a pan, the syrup becomes a glaze or flavours a fruit salad.
