Description
These sugared orange strips come from Confiserie Azuréenne, a confectioner based in Collobrières, in the Maures hills, in business since 1948 according to the box. The ingredient list is short: oranges from Italy, sugar, glucose syrup. They are strips of candied peel rolled in crystal sugar, visible through the window of the 200 g box, which is packed under protective atmosphere.
On the back, the confectioner gives its method for homemade orangettes. Melt dark chocolate to 50 °C in a bain-marie or the microwave, bring it down to 27 °C by grating more chocolate into it, then take it back up to 31 or 32 °C. Dip each strip with a fork and leave it to set on baking paper. Cut into small dice, this candied orange peel flavours a loaf cake, a gingerbread or a financier batter. Left whole, the strips decorate a Yule log or a chocolate entremets.
Once opened, the label advises keeping the strips in a cool place and eating them quickly. The same company also makes marrons glacés and chestnut cream. You will also find this box on the shelves of our shop, 58 rue Tiquetonne, Paris.
