Description
This duck à l'orange comes from Dupérier, a craft preserver based in Souprosse, in the Landes, since 1947. The 750 g glass jar holds duck wing drumettes (manchons), cooked in an orange juice sauce thickened with starch, with slices of candied orange you can see through the glass. The meat is of French origin and the dish is made in Souprosse.
The drumettes are already cooked in their sauce: the dish is ready and only needs warming up. The maker suggests heating it gently in a casserole or a bain-marie, then serving it with pasta or rice. Fresh tagliatelle, basmati rice or a sweet potato mash go well with the sweet and tangy sauce. For a neater plate, let the sauce reduce for a few minutes, add some fresh orange zest and lay the drumettes on top. One jar serves two to three people as a main course.
