Description
Daube de toro au vin de Tursan is a tinned ready meal from Dupérier, an artisan canner in Souprosse, in the Landes, since 1947. Toro means bull meat, which has a tighter grain and a stronger flavour than standard beef. Here it cooks in red wine from Tursan, the appellation on the hills next to the Chalosse, with carrots, onions and ham, until the sauce is brown and thick. The 400 g tin is made in Souprosse.
The label sets out the method: warm the daube over a low heat, in a casserole or a bain-marie, without letting it boil, so the meat stays tender. Dupérier suggests serving it with sautéed potatoes or chips. It also goes with a creamy polenta, fresh tagliatelle or a homemade mash that soaks up the sauce. You can bring it straight to the table in the casserole.
Before opening, keep the tin in a dry, temperate place. Once opened, keep it in the fridge and eat it quickly. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
