Description
This pistachio topping is the salsa dolce al pistacchio from Fabbri 1905, sold in Italy as Top Gold Pistacchio. It is a sweet sauce made to garnish and coat ice creams and desserts. It contains 35% pistachios, glucose syrup, sunflower oil, sugar and cocoa butter. The maker describes it as creamy, with the sweet and salty taste typical of pistachio. The bottle states gluten free and palm oil free.
Shake the bottle before use, then pour in a thin stream. The sauce coats a scoop of vanilla or chocolate ice cream, a panna cotta, a tiramisu or a crêpe. On the Fabbri website, it also goes into a coffee, onto choux buns or quick tartlets. For a whipped ganache or an insert, a pure pistachio paste works better: here sugar and glucose lead.
Keep the 200 g bottle, or 165 ml, closed; the best-before date is printed on the cap. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
