Verbena flavor alcohol-free 125ml Gazignaire

This 125 ml brown glass bottle comes from Jean Gazignaire, a flavour and extract house based in Pégomas, in the Alpes-Maritimes, in the Grasse area. The label describes it as a "natural verbena flavouring with other natural flavourings": verbena leads, backed by other naturally sourced flavouring substances. It contains no alcohol. The base is a sugar syrup thickened with guar gum and xanthan gum, which gives it a slightly coating texture and makes it easy to measure.

It is a pastry ingredient for limited use: it is not taken neat and goes into a mixture in small amounts. Add it to a crème anglaise, an ice cream or sorbet base, a crème brûlée or a whipped ganache, to bring the lemony, herbal note of lemon verbena without infusing leaves. It also flavours a soaking syrup for sponge, a panna cotta or homemade lemonade. Add a few drops, taste, then adjust: the flavouring is concentrated and verbena quickly takes over.
