Description
Giffard, a liqueur maker based in Avrillé, near Angers, since 1885, makes this blackcurrant liqueur from Noir de Bourgogne, a variety known for its strong aroma. The berries are harvested in the Loire Valley and macerated slowly. The ingredient list is four words long: blackcurrant infusion, sugar, alcohol, water. Giffard states that it contains no colouring; its very dark purplish-blue colour with garnet glints comes from the fruit.
On the nose, ripe fruit leads, with the green note of blackcurrant buds; on the palate, the berry taste is clear and intense. In pastry, use it to flavour a sponge soaking syrup, a whipped cream, a dark chocolate ganache, a sorbet or a dark fruit jam. A few spoonfuls in a blackberry and blueberry glaze deepen its colour. In a blackcurrant and chocolate entremets, it carries the fruit through both the mousse and the glaze. Some of the alcohol evaporates during cooking; in a cold preparation, it stays present.
The 70 cl bottle is 20% vol. This product contains alcohol: it is not recommended for pregnant women, and its sale to minors is prohibited. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
