Description
Goût et nous cut chives are a dried herb, chopped into short, pale green pieces. The label lists a single ingredient: chives. They come in a large clear 100 g jar with a green flip-top cap, so you can shake them out or spoon them. According to the label, the jar is packed in Wettolsheim, in Alsace. A hundred grams of dried herb is a large volume, so the jar lasts a long time in the kitchen.
Dried chives lose some of the crunch of a fresh bunch but keep their mild onion aroma, and you have them on hand all year. The maker suggests them with meat, salads and raw vegetables, cheese and fish, and in an omelette or fried eggs. Add them at the end of cooking or straight into a cold dish: herbed fromage blanc, a yoghurt sauce for potatoes, a flavoured butter, a vinaigrette. In a sauce or cream, a few minutes are enough for them to rehydrate.
