Description
This paprika cornflake coating carries the Goût et nous brand of INDIA France Épices, based in Wettolsheim near Colmar, in Alsace, a house that has blended spices and seasonings since 1937. The mix brings together roughly crushed cornflakes, a paprika with vegetables, onion, garlic, chilli, cumin and caraway. Unlike breadcrumbs, the cornflakes stay in large pieces and keep their crunch when cooked, even in the oven, with an orange colour that comes from the paprika.
Use it like a classic breadcrumb coating: the meat or fish goes first into flour, then beaten egg, then the coating, pressed on firmly so it sticks. It suits chicken strips and escalopes, homemade nuggets, cod or hake fillets, courgette rounds or sweet potato sticks. In the oven, a drizzle of oil on top is enough to brown the crust; in a frying pan, cook over medium heat so the spices do not burn. The mix is already well salted, so do not salt the meat before coating it.
