Description
This bag holds 100% cocoa butter, with no other ingredient according to the G. Detou label. Cocoa butter is the fat pressed from the cocoa bean. Here it comes as small, round, pale yellow drops that are easy to weigh and melt quickly. It has little flavour and smells faintly of cocoa.
In chocolate work, its first use is tempering. Melt the chocolate, let it cool to around 34 or 35 °C, then add about 1% of its weight in finely grated cocoa butter or drops: the chocolate sets evenly and keeps its shine. Added in larger amounts, it makes a couverture more fluid for coating bonbons or dipping fruit. Melted with an equal weight of chocolate, it gives the mixture sprayed onto a frozen entremets for a velvet finish. Brushed in a thin layer inside a baked tart case, it stops the pastry going soft under a cream. It is also the base for fat-soluble colourings used to decorate bonbon moulds.
The zip bag closes again after use. Keep it in a cool, dry place, away from strong smells, as cocoa butter picks them up. The best-before date is on the label. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
