Description
This fir honey comes from the Rucher du Luttenbach, the Tonnelier family apiary in Breitenau, in the Villé valley, about fifteen kilometres from Sélestat. Théo-René Tonnelier took over the 300 colonies from his brother Bernard in 2018, in a family of beekeepers going back to their grandfather. It is harvested and jarred in France by the apiary, on the Alsace side of the Vosges mountains, where tall silver firs still grow. The jar carries the EU logo of the Miel d'Alsace PGI and its numbered seal.
It is a honeydew honey: the bees do not forage on flowers but collect the sweet honeydew left on the fir trees. Hence its dark brown colour with green glints, its light resin scent and its balsamic aroma, far from an acacia honey. The harvest depends heavily on the weather and some years there is none. Taste it plain, by the spoon or on toasted rye bread. It gives body to gingerbread or Alsace Christmas biscuits, and goes well with a Munster or a dry goat's cheese. In a dressing or a glaze for duck, one spoonful is enough.
Keep the 500 g glass jar closed, in a dry place at room temperature. You will also find it on the shelves of our shop, 58 rue Tiquetonne, Paris.
